Last month we re-invented garlic bread (again!) and crafted a rather splendid looking wholemeal honey and oat loaf. This month let me introduce to the most deliciously savoury focaccia topping you have ever experienced, and how about a seeded baguette, rested overnight to bake straight from the fridge in the morning.

No Knead Roasted Onion Focaccia Rolls

My favourite topping; deeply savoury slow cooked onions with charred peaks, make these rolls deliciously moreish and leftovers perfect for oniony croutons. This is an easy to make wet dough resulting in light fluffy freezable rolls.

 

Overnight Seeded Baguettes

A little practice is always required when doing the final proof in the fridge, but it is well worth it for that freshly-baked-in-the-morning feeling of these crusty seeded baguettes. Let me give you everything you need to know to bake first thing with success.

A class classic: warm roasted tomatoes with buffalo mozzarella, and a thyme infused mushroom and rocket salad with toasted onion and walnut crumb.
