After experiencing the most amazing breads in Europe I woke up one day and decided to teach myself to bake with wild yeast starter. My “yeasty beasties” are amazingly vigorous, but I have struggled to get good oven spring, and the top of my bread was always too tight and the sides blow out. The final straw was I ruined a $35 breadform basket with sticky sourdough. Googling, I found your video on preventing sticking in bread forms - and it clicked. I’d been using cling film on my dough, and the skin couldn’t form! And I wasn’t using enough flour - and it never occured to me to brush off the excess before baking. So. Simple. And yet, no one else explained that! Your videos are for a true home baker like me - I am baking bread because it makes my heart happy to feed my family from something made by my hands; because I work on a computer all day and it’s like meditation to make something tangible; because it’s chemistry and biology and art all wrapped up in a neat package; and for health, because I love bread but not the chemicals you get in most breads, and artisan bread is expensive and I have to drive 40+ min round trip for a loaf. (I’m also passionate about wild yeast because of the probiotic benefit - easier digestion.) So thank you for filling in allllll the gaps between what the wonderful folks at King Arthur Flour have posted, and my challenges. I’m beyond excited to have answers to my vexing problems, and imnensely appreciate your passion and gift for making home baking accessible to us all.

I have been baking sourdough for only 2 months. I have books by Peter Reinhart, Ken Forkish, and Tartine, which are all wonderful references, however, I cannot tell you how many hours I have spent reading those books only to be confused by terminology (one person’s starter is another person’s levain and another person’s barm) and to have to flip back and forth through 30 pages just to put the recipe steps together.
