It is very possible to overknead a bread dough in a machine, I've been there: Sticky dough without any evidence of the strength and structure that built up along the way. You can stash your dough in the fridge overnight after kneading to make it amazing. Seriously, the dough completely transforms making the final bread so much more delicious. The difference is incredible, but it won't save you much time in the morning. Wouldn't it be lovely to wake up, turn on the oven, remove a loaf from the fridge perfectly proved and bake it straight away? Well it can be done if your willing to... PRACTICE ;-)
