Ciabattas
Unique in their creation, a Ciabatta is a pleasure to make start to finish. You’ll learn how to make a preferment and why, how to handle a super wet dough like these and I’ll show you how to tray bake them or stonebake as you wish. This is the evolution of my recipe in Bread Every Day, taking it that little bit further meaning lighter bread, bigger bubbles and better flavour.

Straightforward and simple in process, this milk, butter, egg, and sugar enriched dough is so versatile and while I stuck to traditional flavours, it’s an ideal bun to play with combinations as you see fit. Lemon Curd
Even as a lover of those “something out of nothing” recipes, homemade Lemon Curd still feels like it’s too good to be true. Such a luxurious zesty sweet spread made with just one single lemon, some butter, sugar, and eggs, and in only ten minutes!? Surely not, you’ll have to try it to believe it
Tomato, Mozarella and Basil Salad
I won’t pretend I invented this, or patronise you by thinking I’m introducing you to it for the first time, it’s a timeless combination for a reason. It’s delicious. Treating each element with care and kindness is the key to making that classic combination something exceptional. A little chili here and there should you wish (I do) and the real best bit, those juices at the bottom of the plate, begging to be mopped up by a super fast ciabatta garlic bread.
